AXEL House Dinner
Hotel Guldsmeden has always had a preference for
organic products – especially those that we eat and
drink – and we must admit that we are becoming quite
fundamentalist in our old age... This is of course only
possible because the range of high-quality organic
products has widened immeasurably since we opened
our first little hotel in 1999.
We can honestly say that every single item that ends
up on our table is either organic (around 95%), or has
a seriously good reason for not being so. If it’s not
organic, we know the story and the background.
In the name of sustainability, we try to look at the whole
picture, and weigh up the pros and the cons – fair-trade,
free-range, local produce, transportation methods – all
these concerns play a part in our decision process.
Organic and sustainable produce is not in itself
synonymous with a healthy diet – it takes more than
that. In our book, healthy food means lots of fresh
vegetables, fresh organic or free-range meat, more than
a glance at the natural seasonal cycle and a knowledge
of the top super-foods.

mean you have to deny yourself a little fun in your
food…
The Axel House Dinner is big on flavour - simple and
abundant, rustic and delicious, made up of the highest
quality organic fresh ingredients, lovingly grown and
bred by a number of small and mainly local suppliers.
Axel House’s chef, Daniel Whitney, draws his influences
from extraordinary culinary adventures across Asia and
Europe to the vegan recipes taught to him by his mother
in New York. His Axel menu will seduce the carnivore and
the vegetarian, the health fiend and the gourmand.
We place great emphasis on quality, healthy ingredients
and consideration for seasonal produce. We are very
fond of root vegetables, lentils and beans, and we enjoy
mixing our favourite ingredients freely - vanilla, honey,
yoghurt, tahini, hummus, fresh herbs, nuts, good bread
and cold cuts and cheeses. Wrap it all up with our rich
but simple desserts and coffee or tea.
The House Dinner is open for all diners, resident or not,
and we recommend pre-booking – dinner´s on the table
at 7 pm!
